Wagyu Garlic Butter Steak Recipe
A good Wagyu steak is all about balance. You want a hot sear on the outside, a tender centre and just enough seasoning to bring out the natural richness of the beef.
Ingredients
1 Wagyu steak, about 1 to 1.5 inches thick
Kosher salt
Fresh cracked pepper
1 tbsp neutral oil
2 tbsp butter
2 garlic cloves, smashed
2 sprigs rosemary or thyme
Flaky salt, to finish
Garlic Herb Butter
4 tbsp softened butter
1 small garlic clove, finely grated
1 tsp chopped parsley
1 tsp chopped rosemary or thyme
Pinch of salt
Mix the butter, garlic, herbs and salt together, then set aside until ready to serve.
How to Cook
Bring your steak to room temperature for 30 to 45 minutes before cooking. Pat it dry well, then season generously with salt and pepper.
Heat a cast iron pan until very hot. Add a small amount of oil, then sear the steak for 2 to 3 minutes per side, depending on thickness.
Add butter, garlic and herbs to the pan. Spoon the melted butter over the steak for the final 30 to 60 seconds.
For best results, cook to:
125°F for rare
130°F for medium-rare
135°F for medium
Rest the steak for 8 to 10 minutes before slicing. Finish with garlic herb butter and a little flaky salt.
