How to Cook the Perfect Wagyu Steak

Let it come to room temperature
Before cooking, take your Wagyu steak out of the fridge and let it sit at room temperature for 30 to 45 minutes. This helps it cook evenly and prevents a cold centre.

Season lightly
Wagyu doesn’t need much to shine. A light sprinkle of coarse sea salt and freshly ground black pepper is all you need. If you like, you can add a hint of garlic powder or a small drizzle of olive oil, but the focus should be on letting the marbling and natural flavour take centre stage.

Preheat your pan or grill
Use a heavy skillet, like cast iron, or a well-heated grill. You want high, even heat so the steak develops a rich, caramelized crust. Preheat until the surface is hot and just starting to smoke.

Sear and cook to your liking
Place the steak onto the hot surface and sear each side for about 1.5 to 2 minutes. Then continue cooking over medium heat for another 1 to 2 minutes per side, depending on thickness. For Wagyu, medium-rare is ideal. Aim for an internal temperature of 52 to 54 degrees Celsius. This keeps the fat soft and buttery without overcooking the meat.

Let it rest
After cooking, transfer the steak to a warm plate and loosely cover it with foil. Let it rest for 5 to 10 minutes. This allows the juices to redistribute evenly, making each bite tender and juicy.

Slice and enjoy
